There should be approximately 25-30 cm between the stool seat and the countertop, so your legs are comfortable and you can sit down without bumping into anything. From this, the two standard heights are derived.
65 cm stool, for kitchen counters and islands.
If the surface is around 90 cm (the typical height of a kitchen or island), a 65 cm stool is the right one.
75 cm stool, for tall bar counters.
